From aspiring to acclaimed: Michelin starred chefs’ journey to success

As social enterprise Rén celebrates its first anniversary, two Michelin-starred chef advocates share advice on how to succeed in Hong Kong’s dynamic culinary industry.

Rén is a Hong Kong-based social enterprise that supports underprivileged youth through food-related initiatives. Founded last year by Jo Soo Tang, Rén has established partnerships with renowned chefs in the city to help young individuals gain work experience and secure employment opportunities in various restaurants. 

To mark Rén’s first anniversary later this month, Jo Soo Tang will collaborate with Michelin-starred chefs Uwe Opocensky (Island Shangri-La, Hong Kong) and Olivier Elzer (Clarence Hong Kong, Culinary Director of St. Regis Hong Kong) to host a fireside chat and dinner at Island Shangri-La, Hong Kong. Ahead of the dinner, we chat with Uwe and Olivier to gain a deeper understanding of their culinary experiences.

What inspired you to become a chef?

Uwe: Throughout my childhood, I spent numerous hours in our kitchen, cooking and baking with my grandmother and mother. Our family bonding revolved around the pleasure of preparing meals and enjoying them together. Living in a farming community further enhanced my gratitude for food as we collaborated with friends during harvest season, reaping the rewards of our hard work. The undeniable importance of food in my life solidified my conviction that pursuing a career as a chef was my ultimate destiny.

How do you encourage young chefs in your kitchen?

Olivier: The kitchen environment has transformed in recent years. I focus on cultivating a supportive and encouraging atmosphere for aspiring chefs. Previously, the culinary industry was notorious for its high-pressure and strict culture, often involving yelling and harshness. However, I advocate for a more empathetic approach. I aim to teach young chefs the essentials and ignite a love for continuous learning. 

Which demographics are underrepresented in Hong Kong kitchens? 

Olivier: While there is a growing representation of chefs from various backgrounds in Hong Kong, there are still relatively underrepresented demographics. Hong Kong’s culinary scene is primarily dominated by Asian cuisine and Asian chefs, which is not surprising considering our geographical location in Asia. There is room for more diversity, such as in Mexico, Middle Eastern countries, etc. As a chef specialising in French food, I see an opportunity to introduce lesser-known French dishes to the Hong Kong audience. 

How is rèn changing the lives of young people in Hong Kong? 

Uwe: Rèn is positively impacting the lives of underprivileged youth in Hong Kong by offering them unique experiences, perspectives, and chances for growth. Our work transforms their lives and enables us to evolve and develop ourselves, individually and collectively.

What do you admire about other chefs in Hong Kong?

Olivier: Hong Kong’s culinary landscape benefits from a diverse group of skilled chefs with distinct styles and techniques. From the robust flavours of Sichuan dishes to the intricate presentations of Thai cuisine, the variety of culinary expressions is diverse. I am enthusiastic about discovering and gaining knowledge from the informal dining experiences in Hong Kong. 

How can the public get involved?

Uwe: The best way to help r é n is by volunteering as an advocate. As a Chef Advocate for R é n, I contribute by creating culinary experiences for their events, including their launch event last year. R é n has diverse advocates supporting them in various areas such as partnerships, finance, events, design, wellness, and sports. Charities and social enterprises frequently face resource constraints, so it’s crucial to empower them to operate their initiatives and campaigns efficiently, thereby expanding their impact within the community.

r é n is seeking employment partners eligible for its Youth Employment Scholarship (YES) Programme, which provides stable job opportunities for disadvantaged youths. 2. Through this programme, 25 youths from three beneficiaries will receive a $5,000 monthly scholarship during their employment. 3. The event will take place on Thursday, May 16, at the Harbour Room & Roof Garden, 56/F, Island Shangri-La, Hong Kong. The evening will begin with cocktails at 6 pm and dinner at 6.30 pm. Tickets are priced at $2,500 per person and are available here.
