Interval Café X Farmacy
The green use of smart mobile farms is on show at the Interval Café x Farmacy collaboration at Cyberport. It grows ingredients in-house through the use of hydroponic planting technology in six smart mobile farms, bringing a new meaning to farm-to-table. Herbs and micro-greens are grown on site to lower transportation carbon emissions and the ingredients are harvested in their prime.

Fresca
Offering easy and ready-to-go meals doesn’t mean that a restaurant can’t be sustainable. Fresca is a neighbourhood café that harvests produce daily from its Hong Kong farm to meet the farm-to-table concept. Organic and heirloom seeds are planted and grown with pure mountain water for the highest quality produce. Creating and recommending food depending on what’s best in the season, fill up on its healthy, clean food.

Sustainability doesn’t just tie into what you eat but what you drink too. This is the ethos behind the farm-to-bar movement driving PENICILLIN. Implementing a closed-loop model of production, this sustainable bar uses up-cycled foods and locally sourced ingredients in its offerings. Being a “scrap-less” bar tests the team’s creativity in recycling, fermenting and growing ingredients for its cocktail creations.

Roganic
One year after the opening of Roganic in London and four months after the restaurant was awarded its first Michelin star, chef Simon Rogan has expanded his concept overseas, bringing his original British cooking to Hong Kong. Mana
Serving up organic and plant-based fast food, Mana is one of Hong Kong’s most popular lunch break spots specialising in vegetarian and vegan options. Customer favourites include the signature rolled flatbreads, vegetarian burgers and daily salads. The restaurant has a strong focus on sustainability and responsible sourcing, aiming for zero waste across its locations by using only plant-based ingredients and biodegradable containers. Mana saves up to three tonnes of food scraps every month to donate to Hong Kong community organic farms, where they are composted.

By having a closer relationship with local farmers, Locofama can utilize the freshest ingredients that are harvested at their prime for the best flavour and nutritional value.

Located within The Green Hub, the Eat Well Canteen is a green venue making its home within a former police station.
