Butchers Club opened as a butcher’s shop in Aberdeen seven years ago and has since grown to include Michelin-recognized eateries around the city, as well as a tropical offshoot on the island of Bali. The key to its success? It sources all of its beef from a farm in New South Wales, Australia, before dry ageing its products to perfection at its warehouse on Hong Kong island.

Farmers Market now imports free-range, hormone- and antibiotic-free chicken, lamb, beef, pork and seafood from Australia each week. We love the bundles, which are perfect for barbecue parties. Fu Ying Pork Butcher

Butcher Kwan Chun Kan has been in the trade for years. As a traditional butcher does, he acquires whole animals from local Hong Kong farms and chops them up for you to choose your favourite cut, whether its ribs, neck, belly, lens, shank, shoulder or chops. Free upgrades to Iberico pork on Friday make Kwan particularly popular.
