Celebrate the Year of the Rat with these auspicious dishes

Tin Lung Heen

Two-Michelin-starred Tin Lung Heen on Level 102 of The Ritz Carlton, Hong Kong, is set against contemporary oriental décor with a dramatic backdrop of the Hong Kong skyline. 

Over Chinese New Year, guests can savour a series of opulent Cantonese dishes by Chef Paul Lau, including Chef’s Dim Sum Selection with steamed termite mushroom dumpling in chilli sauce, baked chicken puff with abalone and deep-fried crispy spring roll stuffed with air-dried oyster and seaweed. A dinner set also features double-boiled sea conch soup with fresh abalone, red date braised sea cucumber, and air-dried oysters with bamboo fungus stuffed with sea moss. 

The Chinese New Year Lunch Menu costs $768 per person, and the Chinese New Year Dinner Menu costs $1,688 per person.

Spring Moon

Michelin-starred Spring Moon at The Peninsula is one of Hong Kong’s most celebrated Chinese restaurants, drawing fans of classic, refined Cantonese cuisine since 1986. Diners here can enjoy the Spring Moon Chinese New Year set menus until February 24. These menus cater for six to 12 people; three distinct menus are tailored to fortune (from $8,880 for six), wealth (from $11,280 for six) and longevity ($14,380 for six). Between February 10-14, Spring Moon’s classic Chinese New Year Poon Choi and Lo Hei will also be available (Poon Choi costs $2,488 for two and $4,888 for four and Lo Hei costs from $1,388).

Mott 32

Award-winning Chef Lee Man-Sing at Mott 32 has prepared a Chinese New Year menu for lunch and dinner. Delicacies that represent good wealth and bounty include succulent whole lobster and abalone Lo Hei, steamed four-finger threadfin cooked in chicken oil, and a delicate bird’s with prawn, duck, chicken, conpoy, mushroom and egg and wok-fried mud crab with turnip cake and chilli. The menu is served à la carte-style between February 10 and 24.

Lung King Heen

Lung King Heen at Four Seasons Hotel Hong Kong was the first Chinese restaurant in the world to receive three Michelin stars. It will serve lunch and dinner menus highlighting auspicious Chinese ingredients such as fish, oysters, and glutinous rice dumplings for Chinese New Year. The menus include wok-fried lobster with lily bulbs, braised conpoy with dried oysters and sea moss, and dragon-well tea-infused crème with vanilla pear compote. Lunch costs $1,280 per person, while dinner costs $2,380 per person (wine pairing optional).

Ho Lee Fook

Usher in the Year of the Dragon with a feast complete with good fortune from Chef ArChan and the team at Ho Lee Fook. Chinese New Year dishes include a luxurious take on Chiuchow-style Lo Hei with emperor red snapper and ten different vegetables and herbs and wok-fried Australian lobster tossed with Ho Lee Fook XO sauce and crispy rice vermicelli. The Chinese New Year dishes are available between February 10 and 17, 24 hours pre-order required.

181, Fortnum & Mason 

For Chinese New Year, 181 at Fortnum & Mason serves an exquisite celebratory menu guided by the principles of elemental cooking — fire, smoke, earth and acid. The menu, aptly named ‘Year of the Dragon, ‘ offers a selection of à la carte dishes that fuse bold flavours; we love the sound of Rosemary Smoked Lamb Chops, Red Pepper and Chorizo ($448) and Pan Roasted John Dory, Nokedli, Bouillabaisse ($588). The Aubrey 

With sweeping views of Victoria Harbour, The Aubrey on the 25th floor of the Mandarin Oriental, Hong Kong welcomes the Year of Dragon with an exquisite night brunch, live music and free-flow Champagne. On February 9, guests booking ‘The Aubrey Sumi to Awa Night Brunch‘ can expect a menu focusing on ‘sumi’ (charcoal) and ‘awa’ (bubbles). Elevated izakaya delicacies include smoked Wagyu steak tartare, raw oysters, chicken katsu sandos and Robata Skewers with Wagyu beef meatballs. The menu costs $988, including two hours of free-flow wines (an additional $200 per person for free-flow Champagne).

Summer Palace

One Michelin-starred Summer Palace at Island Shangri-La will serve an à la carte Chinese New Year menu featuring seasonal celebratory dishes such as sliced yellowfin tuna mixed with assorted fresh fruit, baked fresh prawn with fig and scrambled egg whites with fresh lobster and crab coral. In addition, two takeaway menu options are available for either four or eight people, featuring favourites such as deep-fried sesame dumplings, baked peony puffs stuffed with lotus seed paste, sautéed rice cake with shredded pork, black mushroom and dried shrimp.
